Ingredients

  • crust for 10-inch pie pan
  • 2 c. leeks or green onions
  • 2 Tbsp. butter
  • 1/2 lb. Swiss cheese, grated
  • 1 oz. Parmesan or Romano
  • 1 Tbsp. flour
  • 4 eggs, beaten
  • 1 3/4 c. milk or cream
  • 1 zucchini
  • salt and pepper

Directions

    Prepare crust and line pan.

    Spread with beaten eggs with pastry brush and bake for 5 minutes at 500°.

    Saute onions in butter until golden, season with salt and pepper.

    Put zucchini on bottom with onions.

    Toss flour and cheese together.

    Spread on top of zucchini.

    Pour milk and eggs on top.

    Bake at 400° for 5 minutes and then for 30 minutes at 325° or until knife comes clean.
