- crust for 10-inch pie pan
- 2 c. leeks or green onions
- 2 Tbsp. butter
- 1/2 lb. Swiss cheese, grated
- 1 oz. Parmesan or Romano
- 1 Tbsp. flour
- 4 eggs, beaten
- 1 3/4 c. milk or cream
- 1 zucchini
- salt and pepper
Directions

1Prepare crust and line pan.

2Spread with beaten eggs with pastry brush and bake for 5 minutes at 500°.

3Saute onions in butter until golden, season with salt and pepper.

4Put zucchini on bottom with onions.

5Toss flour and cheese together.

6Spread on top of zucchini.

7Pour milk and eggs on top.

8Bake at 400° for 5 minutes and then for 30 minutes at 325° or until knife comes clean.
