- 1 unbaked pie shell
- 1 egg, beaten
- 8 slices bacon, cooked
- 6 eggs, beaten
- 4 oz. shredded Swiss cheese
- 1 1/4 c. half and half (can use canned mix)
- 1/2 tsp. salt
- 1/8 tsp. nutmeg
- 1/8 tsp. pepper
Directions

1Brush pie shell with beaten egg.

2Prick and bake 5 minutes at 425° for glass pan or 450° for metal.

3Cool on wire rack.

4Reduce oven temperature to 350°.

5Crumble bacon and sprinkle with cheese in pie shell.

6Beat remaining ingredients until well blended. Pour in pie shell.

7Bake in preheated oven 35 to 40 minutes.

8Let stand 10 minutes after baking.

9This is important to allow quiche to set.
