- 4 ounces beef, dried aka beef erky coarsely cut
- 1 tablespoon butter or margarine
- 1 each pie shell (9 inch) 9-inch shell, unbaked
- 7 ounces swiss cheese natural coarsely shredded
- 4 teaspoons black pepper
- 4 large eggs
- 1/2 cup cream half and half, 10%
Directions

1Preheat oven to 375F (190C) (moderate)

2Lightly cook dried beef in fat, about 2 minutes.

3Cool slightly; sprinkle into pastry shell.

4Sprinkle cheese over beef.

5Mix seasonings and sprinkle over cheese.

6Beat eggs and half-and-half together.

7Pour over cheese and beef.

8Bake 40 minutes or until lightly browned and a knife inserted into the center comes out clean.

9NOTE: If beef is very salty, pour 1 cup boiling water over beef.

10Drain well; then cut coarsely.
