- 2 uncooked pie shells
- 8 eggs
- 1 cup sour cream
- 2 12 cups milk
- 3 cups shredded cheddar cheese
- 12 cup onion, finely minced
- 12 green pepper, finely minced
- 1 cup ham, diced small
- salt and pepper
- 12 cup fine herbs (your choice of parsley,thyme,chives)
Directions

1Preheat oven to 425.

2Slightly soften onion and peppers in the microwave for 1 minute.

3Beat eggs,milk and sour cream until well incorporated.

4Mix in remaining ingredients and pour into pie shells.

5I bake them on a cookie sheet in case of spillage.

6Bake at 425 for 10 minutes then reduce to 325 for 40 - 50 minutes or until set.

7Cool for 15-20 minutes before serving.
