  • 2 eggs
  • 3 ounces caster sugar
  • 3 ounces self raising flour

Directions

    Break eggs into a bowl, whisk lightly slowly adding the sugar then whisk well until thick, creamy and almost white in colour.

    Lightly fold the flour into the mixture.

    Place in well greased cake tin 7inch=18cm.

    Bake at 180C,350F Gas Mark 4 for 30 mins - Do not open the oven door till cake is cooked or it may flop.

    Once cooled slice and add fillings and enjoy.
