  • 1/2 lb. bacon
  • 1 (9-inch) unbaked pie shell
  • 3 eggs
  • 1 1/2 c. heavy cream
  • 1/2 tsp. salt
  • pinch of pepper
  • pinch of nutmeg
  • 1/4 c. grated Swiss cheese

Directions

    Cut bacon into bite-size pieces after frying and draining on a paper towel.

    Spread on bottom of pie shell.

    Beat eggs, cream and seasonings just enough to blend.

    Stir in cheese; pour into pie shell.

    Bake at 375° about 35 minutes, or until pie shell is golden brown and filling is firm.

    Serves 4 as an entree.
