  • 1 (9-inch) pie crust
  • 1 c. shredded Swiss cheese
  • 6 eggs
  • 1 1/4 c. half and half or milk
  • 1/8 tsp. ground nutmeg
  • 8 slices bacon, crisp, cooked, drained and crumbled
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

Directions

    Line unbaked shell with 12-inch square of aluminum foil.

    Fill with rice or dried beans or peas.

    Cover rim of shell with edges of foil.

    Bake in preheated oven at 450°

    until lightly browned at edges, 10 to 15 minutes.

    Lift out foil and rice.

    Cool on wire rack.
