  • 9-inch one crust pastry
  • 12 slices crisp bacon, crumbled
  • 1 c. shredded cheese (Cheddar or Swiss)
  • 1/2 c. minced onion
  • 4 eggs
  • 2 c. milk or whipping cream
  • 1 tsp. salt
  • 1/2 tsp. sugar
  • 1/8 tsp. cayenne red pepper

    Heat oven to 425°.

    Prepare pastry.

    Sprinkle bacon, cheese and onion in pastry-lined pie pan.

    Beat eggs slightly; beat in remaining ingredients.

    Pour cream mixture into pie pan.

    Bake 15 minutes.

    Reduce oven temperature to 300° and bake 30 minutes longer or until knife inserted 1-inch from edge comes out clean. Let stand 10 minutes before serving.
