  • 1 pastry for 9-inch single crust
  • 12 slices crispy crumbled bacon
  • 1 c. shredded Swiss cheese (4 oz. natural cheese)
  • 1/2 c. minced onion
  • 4 eggs
  • 2 c. whipped or half and half cream
  • 3/4 tsp. salt
  • 1/4 tsp. sugar
  • 1/8 tsp. cayenne red pepper

Directions

    Heat oven to 425°.

    Sprinkle bacon, cheese and onion on pastry lined pie pan.

    Beat eggs and blend in remaining ingredients. Pour onto pie pan on top of first 3 ingredients.

    Bake 15 minutes, then reduce oven to 300° and bake 30 minutes longer or until knife comes out clean.

    Let pie stand 10 minutes before serving.

    Makes 6 main dish slices.
