Quiche Lorraine(Serves 8)

- 3 eggs, whipped
- 1 pt. light cream
- 1/2 c. Swiss cheese, grated
- salt, pepper, cayenne pepper to taste
- 1/2 c. chopped onion
- 1/2 c. diced ham
- 1/4 c. melted butter
- 1/2 c. fried crisp bacon, crumbled
- 1/2 c. diced Swiss cheese
- 9-inch pie shell (deep dish)
Directions

1Mix eggs, cream, grated cheese and seasonings.

2Saute onions and ham in butter.

3Add bacon and diced cheese and spread evenly in bottom of pastry shell.

4Pour egg mixture over ham mixture and fill to brim of shell.

5Bake at 400° for about 45 minutes or until set.
