  • 2 c. dried apricots (uncooked)
  • 1 1/2 c. water
  • 1 c. sugar
  • 1/2 tsp. salt
  • 1 Tbsp. lemon juice
  • 1 Tbsp. butter or margarine
  • prepared crust for 2 crust 9-inch pie

Directions

    Put apricots through food chopper.

    Combine fruit, water, sugar, salt, lemon juice and butter.

    Bring to boil; cook for 3 minutes, stirring constantly.

    Prepare pie crust according to directions; pour in filling.

    Cover with strips of pastry.

    Bake in moderately hot oven (425°) for 30 minutes, or until done. Serves 6 to 8.
