Quick Autumn Soup

Ingredients

  • 1/2 lb. ground beef
  • 1/2 c. chopped onion
  • 1/2 c. chopped carrot
  • 1/2 c. chopped celery
  • 1/2 c. chopped potato
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. meat extract
  • 1 bay leaf, crumbled
  • pinch of basil
  • 1 lb. can tomatoes
  • 1 can whole kernel corn

Directions

    Brown the ground beef in soup pot until crumbly. Add onion. Cook 5 minutes longer. Stir in vegetables and next 5 seasonings and 2 cups hot water. Simmer, covered, for 20 minutes. Stir in tomatoes and corn. Simmer 10 minutes longer.
