Quick Beef Carbonnade

  • 2 1/8 tablespoons butter
  • 2 1/4 pounds beef chuck cut into large cubes
  • 1 onion finely chopped
  • 1 tablespoon flour
  • beer 25 cl.
  • 1 slice bread or gingerbread.
  • 1 teaspoon mustard
  • 1 tablespoon brown sugar

Directions

    Heat 20 gr. of butter in a pressure cooker, brown the meat on all sides.

    Remove from heat and set aside.

    Melt 10 gr. butter add the onion .

    Saute for 4-5 minutes, stirring constantly.

    Add the meat, sprinkle with flour and add the beer.

    Stir and add the slice of bread spread with mustard and brown sugar.

    Season with salt and pepper.

    Cover and lock the pressure cooker to build pressure over high heat.

    When the indicator sounds, turn heat down to medium and let it simmer for 35 minutes.

    Remove from heat and let stand for 5 minutes.

    Run under cold water to help release the pressure before unsealing the lid.
