Quick Beefaroni Casserole

Ingredients

  • 1 can (12 oz.) processed meat, cubed
  • 1 c. chopped onions
  • 1/2 c. chopped green pepper
  • 1 c. sliced mushrooms or 3 oz. can sliced mushrooms, drained (optional)
  • 1/2 c. sliced ripe olives
  • 3 Tbsp. margarine
  • 2 cans (15 oz.) Chef Boyardee Beefaroni
  • 1/2 c. sour cream
  • grated Parmesan cheese

Directions

    Preheat oven to 350°.

    Saute meat, onions, green pepper, mushrooms and olives in margarine for ten minutes.

    Add Beefaroni and sour cream; mix well.

    Spoon mixture into greased 2-quart casserole.

    Bake at 350° for 20 to 25 minutes.

    Sprinkle with grated cheese.

    Garnish with olive and mushroom slices if desired. Serves four to six.
