- 1 cup quick-cooking oats
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup whole milk
- 1/3 cup vegetable oil
- 1 large egg, room temperature, lightly beaten
- 1 cup chopped fresh broccoli, blanched
- 4 cups
Directions

1In a large bowl, combine flour, oats, sugar, baking powder and salt. In a small bowl, mix milk, oil and egg; stir into dry ingredients just until moistened. Fold in broccoli and cheese.

2Spoon into greased or paper-lined muffin cups. Bake at 400° for 18-20 minutes or until top springs back when lightly touched.
