  • 1 medium onion, diced
  • 1 15-ounce can black beans, washed and drained
  • 1 15-ounce can tomatoes w/chilies or jalepenos
  • 12-16 ounces frozen corn
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon ground cumin

    In deep saucepan or dutch oven, saute onion in the oil until transparent. Add remaining ingredients. Cover and simmer for 20 minutes. Serve hot.
