- 1/2 c. butter or oleo
- 12 pkg. Equal
- 1 egg, slightly beaten or 1/4 c. egg substitute
- 2 c. flour
- 3 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/4 tsp. ginger
- 1/4 tsp. nutmeg
- 1 c. skim milk
- 3/4 c. chopped pecans
Directions

1Melt and cool butter or oleo.

2Add Equal.

3Add egg.

4Mix well. Mix and sift dry ingredients.

5Add to butter mixture alternately with milk.

6Stir in pecans.

7Pour into greased loaf pan (9 1/2 x 5 1/4 x 2 3/4-inch).

8Bake in a 350° oven about 1 hour.

9Let stand one day, wrapped in waxed paper or foil, for easier slicing. Makes 20 slices, 106 calories each.
