  • 2 chicken breasts, boned and quartered
  • 2 Tbsp. oil
  • 1 c. cooked ham, cut in cubes
  • 1 onion, chopped
  • 1 can stewed tomatoes
  • 1 c. chicken broth
  • 1 (10 oz.) pkg. frozen lima beans, frozen corn, partially thawed
  • 3 small potatoes, quartered
  • 1 tsp. salt
  • pepper to taste

Directions

    Brown chicken in oil.

    Add ham and onion; cook until lightly browned.

    Add tomatoes, broth, lima beans, corn and potatoes. Cover; cook over medium heat for 20 minutes.
