Quick Carrot-Nut Bread

  • 1 1/2 c. sifted all-purpose flour
  • 1 1/2 tsp. baking soda
  • 1/4 tsp. cinnamon
  • 3/4 c. sugar
  • 2 beaten eggs
  • 1/2 c. vegetable oil
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 1 1/2 c. grated carrots
  • 1 1/2 c. ground pecans or walnuts

Directions

    Preheat oven to 350°.

    Sift together flour, baking soda and cinnamon.

    Add sugar, eggs, vegetable oil, vanilla and salt. Blend in with a few swift strokes the carrots and nuts.

    Bake in a greased pan 1 hour.

    Cool in the pan 10 minutes, then turn out onto a rack for further cooking.

    Makes one 5 x 9-inch loaf.
