Quick Cheesy Doughnuts

  • 1-1/2 quart Vegetable Oil (Less If Needed)
  • 5 whole Eggs
  • 1-1/2 cup Sugar
  • 1 pound Homogenized Cheese, Natural
  • 1 pound Flour
  • 4-1/2 ounces, weight Soft Margarine
  • 1 teaspoon Baking Soda
  • 1 pinch Salt

Directions

    Heat the oil in a deep fryer or a large pot.

    In a large bowl of a stand mixer beat the eggs with sugar until the mixture is light, fluffy and lemon-colored, about 5 minutes. Gradually, add the cheese, flour, margarine, baking soda, and salt. Mix until the ingredients are well combined.

    Take a portion of the batter using a tablespoon and drop into the the hot oil. Repeat it several times. Deep fry for about 7-10 minutes, until the doughnuts are golden brown on both sides.

    Remove each doughnut from the fat using a draining spoon, and drain on paper towels. Repeat frying until you use up all the batter.

    You may sprinkle each doughnut with powdered sugar, or drizzle with honey, if desired.
