Ingredients

  • 1 None rotisserie chicken, skin removed, cut into pieces
  • 2 cans (14 oz each) diced tomatoes
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1/2 cup chicken stock
  • 1/4 cup kalamata olives
  • 1 tbsp fresh basil leaves
  • None None Cooked white rice and steamed green beans, to serve

Directions

    Preheat the oven to 350°F.

    Place chicken in a baking dish with tomatoes, beans and stock. Season to taste. Cover with lid or foil.

    Bake for 25-30 mins, removing cover for last 15 mins. Stir in olives and basil. Serve with rice and green beans.
