Quick Chicken Casserole

Ingredients

  • 1 (6 oz.) can boned chicken (about 1 c.)
  • 1 can cream of chicken soup
  • 1 c. diced celery
  • 2 tsp. minced onion
  • 1/2 c. chopped pecans
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbsp. lemon juice
  • 3/4 c. mayonnaise
  • 3 hard-cooked eggs, thinly sliced
  • 2 c. crushed potato chips

Directions

    Drain and dice chicken, reserving the broth.

    Combine the chicken, broth, soup, celery, onion, pecans, salt, pepper, lemon juice, mayonnaise and eggs.

    Spoon into 1-quart casserole dish. Sprinkle with potato chips. Bake at 450° for 15 minutes or until lightly brown.
