Quick Chicken Fried Rice

  • 2 cups leftover cooked rice
  • 2 eggs
  • 1 cup leftover cooked chicken
  • 12 cup French beans
  • 1 spring onion
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons butter
  • 2 sprigs fresh coriander

Directions

    Chop the Beans , Onion and Sprigs of Coriander.

    Break apart the leftover chicken pieces.

    Heat 1 tablespoon butter in a heavy based pan.

    Add the beans and onion.

    Saute for 2 mins and set aside.

    Add the remaining butter and the leftover rice and saute

    Add the salt and pepper while stirring.

    Break 2 eggs and scramble in the same pan and mix with the rice, while sauteing.

    add the shredded chicken and the veggies to the rice and stir for 2 minutes.

    Take off the heat and add the coriander sprigs for decoration.

    Serve hot.
