Quick Chicken Marengo

Ingredients
- 3 whole chicken breasts, pounded and cut into thick strips or 2-inch pieces
- 1/2 c. flour
- 1/2 tsp. basil
- 1/2 tsp. oregano
- 2 medium onions, cut in chunks
- 1 green pepper, cut in chunks
- 1 can crushed tomatoes
- 2 c. sliced mushrooms
- 4 cloves garlic, minced
Directions

1Mix the flour with the oregano and basil in a plastic bag. Put 6 to 8 pieces of chicken in the bag at a time and shake until all chicken is coated with flour mixture.

2Lightly brown the chicken pieces in margarine or butter.

3Transfer to a 4-quart saucepan and add the garlic, onion, pepper, tomatoes and mushrooms.

4(Vegetables could be sauteed briefly in the skillet first to bring out their flavor.)

5Cover the saucepan; bring to a boil.

6Reduce heat and simmer for 20 minutes.

7Serve over wide noodles or rice.
