Ingredients

  • 2 tablespoons oil
  • 1 pound ground beef
  • 2 tablespoons tomato puree
  • 14 ounces sweet corn
  • 16 ounces kidney beans drained and rinsed
  • 4 roasted red peppers from a jar, cut into strips
  • 28 ounces chopped tomatoes
  • 14 ounces baked beans
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 pinch sugar
  • 1 cup sour cream
  • 4 whole green chilies from a jar
  • tortilla chips to serve

Directions

    Heat the oil in a saucepan and cook the meat for 5 mins. Stir in the tomato puree. Add the sweet corn and kidney beans and continue cooking for 3 mins. Add the peppers, tomatoes, baked beans and 2 cups of water. Stir and simmer for 5 mins. Add the paprika and cayenne pepper and season with salt, black pepper and a pinch of sugar.

    Spoon into bowls and top with a dollop of sour cream and a whole chilli. Serve with tortilla chips.
