Quick Chipotle Mayo

- 2 whole Chipotle Peppers In Adobo Sauce, Minced
- 1/4 cups Mayonnaise
- 1/2 whole Lime, Squeeze Out All The Juice
- 1/4 teaspoons Cilantro, Dried (or Fresh, If You Have It)
- 2 dashes Salt And Pepper, to taste

1If preparing by hand, carefully mince chipotle peppers. Whisk all ingredients together in a small bowl.

2If using a food processor, throw it all in and blend!

3Let rest for 5-10 minutes, if you have time, to help the flavors combine.

4I pour this generously over fish tacos!

5Also, I keep chipotle peppers in the freezer for weeks at a time and just use individual peppers and sauce as needed. I'm a single girl and it takes me a while to use up one of the cans, but they hold up amazingly in the freezer!
