Ingredients
- 2 tablespoons olive oil
- 2 lbs lamb, cubed
- 2 medium onions, sliced
- 2 garlic cloves, minced
- 12 cup raw white rice
- 1 lb potato, pared and thinly sliced
- 4 teaspoons salt
- 1 12 teaspoons curry powder
- 14 teaspoon pepper
- 12 lb zucchini, sliced
- 1 (9 ounce) package frozen artichoke hearts
- 28 ounces tomatoes, undrained
- 14 cup chopped parsley
Directions

1Pre heat oven 350.

2Heat oil in a large skillet, brown lamb in batches.

3Add onion and garlic, saute' until golden, about 5 minutes.

4Return lamb to skillet, mixing well.

5In a 3qt casserole,place in layers, 1/3 meat,rice, potatoes,salt,curry powder,pepper,zucchini,artichokes and tomatoes.

6Repeat layering twice with the rest of the ingredients.

7Bake covered, 1 1/2 hrs or until lamb and potatoes are tender.

8Top with parsley and serve.
