  • 2 Tablespoons Olive Oil
  • 1 whole Yellow Onion, Diced
  • 1 teaspoon Cumin Seeds
  • 1/4 teaspoons Ground Cardamom (or Curry Powder)
  • 4 cloves Garlic, Minced
  • 4 cups Broth
  • 1 can (14.5 Oz. Size) Diced Tomatoes
  • 2 cups Red Lentils
  • 2 Tablespoons Fresh Ginger, Minced
  • 1 whole Jalapeno, Finely Diced And Seeded
  • 1 teaspoon Ground Turmeric
  • 1 teaspoon Salt

Directions

    Heat the oil in a large skillet over medium heat.

    Saute onion in oil until translucent.

    Add cumin seeds, cardamom or curry powder and garlic.

    Stir and continue to heat for 2 minutes.

    Add broth, tomatoes, lentils, ginger, jalapeno pepper, turmeric and salt.

    Bring to a boil.

    Cover, reduce heat and simmer 15 minutes.
