Ingredients

  • 1 cup rice uncooked
  • 1 pint grape tomatoes - halved
  • 3 scallions bunchs, - chopped
  • 1 head garlic - crushed& chopped
  • 1 bell pepper - chopped
  • 1 bunch cilantro - chopped
  • 1 jalapeno - chopped with seeds
  • 29 ounces black beans can of, rinsed& drained
  • olive oil - for drizzling
  • 1 tablespoon rub - LivingtheGourmet Spice
  • 1 teaspoon cumin
  • 1 teaspoon brown sugar
  • 1 juice lime

Directions

    Prepare the rice as directed.

    Heat a large frying pan with a few drizzles of olive oil. Add the tomatoes, scallions, garlic, bell pepper, cilantro and Jalapeno. Saute for a minute or two or until the garlic is fragrant.

    Add the cooked rice to the sauteed veggies and toss. Add the beans, toss and continue to cook on low until everything is evenly heated.

    Combine the ingredients for the seasoning. Add to the rice and beans and again toss.
