- 1/2 cup chopped red pepper
- 1/2 cup chopped onion
- 4 cloves garlic, minced
- 1 Tbsp. olive oil
- 3 cups chicken broth
- 1 tsp. ground turmeric (optional)

- 1 pkg. (10 oz.) frozen peas and carrots, thawed
Directions

1Cook and stir red pepper, onion and garlic in olive oil in large nonstick skillet on medium-high heat 5 minutes or until red pepper is crisp-tender.

2Add broth and turmeric; bring to boil.

3Stir in shrimp, rice and vegetables; cover.

4Reduce heat to low.

5Simmer 5 minutes or until broth is absorbed and shrimp turn pink.
