- 1 1/2 doz. corn tortillas
- 1/2 lb. lean ground beef
- 1/2 onion or 1 small onion, chopped
- 1 small can sliced olives
- 2 c. grated Jack cheese
- 1 (16 oz.) can enchilada sauce (Las Palmas)
- cooking oil
- seasonings for meat: salt, pepper, garlic or taco seasonings
Directions

1Brown ground beef with seasonings and onion.

2Drain.

3Place sauce in a bowl wide enough to dip tortillas in.

4Put about 1/4-inch of oil in frypan.

5Heat oil.

6Put 3 tablespoons of sauce in a cake pan or a large casserole dish.

7Spread until bottom of pan is covered in sauce.
