  • 1 c. chopped onions (2 medium onions)
  • 2 cloves garlic, crushed
  • 2 Tbsp. vegetable oil
  • 1 1/2 lb. fish fillets, cut in 1-inch pieces
  • 2 (10 3/4 oz. each) cans condensed chicken broth
  • 2 soup cans water
  • 3 medium tomatoes, diced
  • 2 medium green peppers, diced
  • 1/2 tsp. salt
  • 1/2 tsp. oregano
  • 1/2 tsp. cayenne pepper

Directions

    Cook onions and garlic in oil in a large, heavy pan, until tender.

    Add remaining ingredients.

    Heat to boiling.

    Cover and simmer until fish flakes easily with fork, about 5 minutes.
