Ingredients

  • 2 medium onions, chopped
  • 2 cloves garlic, crushed
  • 2 Tbsp. vegetable oil
  • 1 1/2 lb. fish fillets, cut into 1-inch pieces
  • 2 cans (10 3/4 oz.) condensed chicken broth or 2 c. chicken stock
  • 2 soup cans of water, or 2 c. water
  • 3 medium tomatoes, coarsely chopped
  • 2 medium green peppers, chopped
  • 1/2 tsp. salt
  • 1/2 tsp. dried oregano
  • 1/2 tsp. ground red pepper

Directions

    Cook and stir onions and garlic in oil in Dutch oven, or heavy saucepan, until onions are tender.

    Add remaining ingredients. Heat to boiling, reduce heat and simmer until fish flakes easily, about 5 minutes.
