Quick Fish Stew

Ingredients

  • 2 large capsicums/sweet peppers
  • 2 large tomatoes
  • 1 tsp onion & garlic powder
  • 1/2 tbsp paprika
  • 1 tbsp butter
  • 1 large white fish fillet
  • 1 dash cracked black pepper
  • 1 pinch salt
  • 2 tsp olive oil

Directions

    Slice peppers and tomatoes thinly.

    Layer veggies in pot and top with onion and garlic powder and paprika.
  3. 3
    Arrange butter so that it will melt generally evenly over the veggies.
  4. 4
    Cover and cook over low heat while preparing the fish.
  5. 5
    Slice fish into bite-size pieces and mix well with pepper, salt and oil.

    Gently fold fish into veggie stew (colours should still be bright and tomatoes half disintegrated), cover and simmer until just boiling.

    Remove from heat and serve hot with couscous or your preferred alternative.
