- 3/4 c. cooked brown rice
- 1/2 onion, chopped
- 1/4 c. chopped green pepper
- 3/4 c. grated light Cheddar cheese (by Cracker Barrel)
- 1 pkg. (7-inch) authentic pressed tortillas (by Zapata)
- 2 Tbsp. organic salsa (optional)
Directions

1Mix first 5 ingredients in a bowl.

3If desired, add 2 tablespoons organic salsa to this mixture.

4Place mixture in the center of tortilla and fold.
