  • 1 can refried black beans (by Bearitos)
  • 3/4 c. cooked brown rice
  • 1/2 onion, chopped
  • 1/4 c. chopped green pepper
  • 3/4 c. grated light Cheddar cheese (by Cracker Barrel)
  • 1 pkg. (7-inch) authentic pressed tortillas (by Zapata)
  • 2 Tbsp. organic salsa (optional)

Directions

    Mix first 5 ingredients in a bowl.

    Mix well.

    If desired, add 2 tablespoons organic salsa to this mixture.

    Place mixture in the center of tortilla and fold.

    Next, place all burritos on a microwave-safe dish and cook on High for 1 minute, uncovered.
