  • 2 c. cornmeal
  • 1/2 c. flour
  • 1/2 tsp. soda
  • 1 tsp. salt
  • 3/4 c. sugar
  • 1 tsp. dry yeast
  • 2 c. buttermilk
  • 2 to 3 Tbsp. melted shortening

Directions

    Preheat oven to 375° (350° if using glass pan).

    Mix and sift together first 5 ingredients.

    Add yeast, buttermilk and shortening for a thin batter.

    Mix lightly.

    Pour into greased loaf pan; bake 55 minutes.

    Cool on rack for 10 minutes.

    Remove from pan.

    Freezes well.

    If self-rising meal and flour are used; omit salt and soda.
