Quick Lima Bean Bake

  • 2 c. lima beans, cooked and drained (garden fresh is best)
  • 1 (8 oz.) can whole kernel corn, drained
  • 1 (8 oz.) can stewed tomatoes
  • 1/4 c. quick cooking rice
  • 1/2 tsp. dried Italian seasoning, crushed
  • 1/4 c. shredded Parmesan cheese

Directions

    Place beans in a 1 1/2-quart casserole.

    Stir in corn, tomatoes, rice and Italian seasoning.

    Bake, covered, in a 350° oven for 25 to 30 minutes.

    Stir.

    Top with cheese.

    Bake 5 minutes more.
