Quick Mix Pepperoni Batter Bread

  • 3 1/4 c. all-purpose flour
  • 1/2 c. finely chopped pepperoni
  • 1/2 c. grated sharp or Cheddar cheese
  • 2 Tbsp. sugar
  • 1 tsp. salt
  • 1 pkg. Fleischmann's RapidRise yeast
  • 2 Tbsp. margarine, softened
  • 1 1/4 c. hot water (125~ to 130~)

    Set aside 1 cup flour.

    Mix together remaining ingredients, including yeast, in a large bowl.

    Stir in margarine and water into dry mixture.

    Mix in only enough flour to make very thick batter. Cover; let rest 10 minutes.

    Turn batter into greased 1 1/2-quart casserole.

    Cover.

    Let rise in warm draft-free place until double in size, about 35 to 40 minutes.

    Bake at 375° for 35 minutes. Check for doneness.
