  • 2 large eggs separated
  • 113 cup milk
  • 2 tablespoons vegetable oil
  • 2 cups quick bread mix

Directions

    Beat egg yolks in a medium mixing bowl; add milk and oil.

    Add Quick Bread Mix, stirring until mixture is smooth.

    Beat egg whites (at room temperature) until stiff peaks form, and gently fold back into the batter.

    Pour about 13 cup batter into a hot, lightly oiled waffle iron.

    Bake about 5 minutes or until steaming stops.

    Repeat procedure until all batter is used.

    Serve warm with powdered sugar and fresh berries if desired.
