Quick Nut Cake

  • 4 heaping Tbsp. flour
  • 4 eggs, separated
  • 4 Tbsp. oil
  • 4 Tbsp. sugar
  • 1 tsp. baking soda
  • 1 Tbsp. lemon juice
  • 1 Tbsp. cognac (or something else)
  • 2 c. coarsely chopped walnuts
  • 1 (8 oz.) glass sugar

Directions

    Beat egg yolks with the sugar until mixture is white.

    Add oil, lemon juice, and cognac and when well blended, mix in the flour and baking soda.

    This mixture will be loose.

    Pour into greased 13 x 9-inch baking pan and bake for 10 minutes at 350°. Now beat egg whites with the cup of sugar until it is stiff.

    Mix in the nuts; after 10 minutes, remove pan from oven and pour on the nut mixture.

    Replace in oven for 10 to 12 minutes.

    Cut into squares when cold.
