  • 2 garlic cloves, pressed
  • 2 teaspoons olive oil
  • Vegetable cooking spray
  • 3 (10-ounce) packages fresh spinach
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground red pepper
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons freshly grated Parmesan cheese

    Saute garlic in hot oil in a large skillet coated with cooking spray over medium-high heat 1 minute. Add spinach, 1 handful at a time, and saute just until spinach begins to wilt. Add salt, red pepper, and lemon juice, gently tossing to coat. Remove from heat, and sprinkle evenly with Parmesan cheese.
