- 3 slices lean bacon
- 3 c. cheese (variety), shredded
- 1 c. half and half milk
- 1 medium onion, diced
- 4 large eggs
- 1 prepared pie crust
Directions

1Saute bacon until crispy.

2Drain and reserve 1 teaspoon bacon fat to saute the diced onion in until transparent.

3In blender jar, mix eggs on highest speed until fluffy.

4Add half and half and blend until frothy.

5In pie crust, layer onion, half of the crumbled bacon, cheese, egg mixture and remaining bacon.

6Bake in preheated oven at 350° for 1 hour or until almost set.

7Quiche will thicken more as it cools.

8Can be used for an appetizer, brunch or a light lunch.
