Quick Scalloped Potatoes

- 3/4 Tbsp. hot water
- 4 c. peeled and diced potatoes
- 1 c. chopped onion
- 2 tsp. salt
- 3/4 c. light cream or condensed milk
- 1/8 tsp. pepper
- 1/2 c. grated sharp Cheddar cheese
- 1 Tbsp. minced parsley
Directions

1Mix water, potatoes, onion and salt in a saucepan; cover and cook for 5 minutes over medium heat.

2Lower heat and continue cooking for 20 minutes, or until potatoes are tender.

3Remove cover and stir gently over low heat until potatoes look dry.

4Stir in the remainder of ingredients and heat until cheese melts, about 3 to 4 minutes.

5Makes 4 to 6 servings.
