- 4 boneless, skinless chicken breast halves, or 6 boneless, skinless chicken thighs
- 1/4 cup sake
- 2 tablespoons mirin
- 4 teaspoons soy sauce
- 1 teaspoon light or dark brown sugar
Directions

1Coat a cast-iron skillet or another heavy skillet with nonstick cooking spray, then spray it a second time.

2(For this recipe, it is best to avoid a pan with a nonstick coating.).

3Heat the skillet over high heat.

4When it is very hot, add the chicken in one single layer, with the smooth side (formerly the skin side) down.

5If necessary, do this in batches.

6Allow the chicken to cook until it is a deep golden brown, 2 to 4 minutes.

7Turn and brown the other side.

8Transfer to the slow cooker, smooth side up.

9Return the skillet to the stove, lower the heat to medium, and add the sake, mirin, soy sauce, and brown sugar.

10Cook, scraping up any browned bits stuck to the pan.

11Pour the liquid over the chicken.

12Cover and cook on HIGH for 2 hours for breasts, 3 hours for thighs.
