Quick Tomato Beef

  • 1 lb. ground beef
  • 1 (14 1/2 oz.) can original recipe stewed tomatoes
  • 1 medium onion, cut in chunks
  • 1/2 green pepper, cut in strips
  • 1/8 tsp. cayenne pepper
  • 1 (16 oz.) can whole new potatoes, drained and sliced
  • 1 c. shredded Monterey Jack or Cheddar cheese

Directions

    In skillet, brown beef and drain. Drain tomatoes, reserving liquid into skillet. Add onion, green pepper and cayenne.

    Cook over high heat 5 to 8 minutes or until slightly thickened, stirring often. Stir in tomatoes and potatoes.

    Heat thoroughly. Top with cheese; heat until melted.
