Quick Vegetable Fried Rice

Ingredients

  • 1 pkg (10 oz each) frozen mixed vegetables, thawe and drained
  • 1 can (8oz each) Bean sprouts, drained
  • 1 can (8oz each) sliced water chestnuts, drained
  • 2 C cold, cooked long-grain white rice
  • 2TBS oil
  • 2 eggs, beaten
  • 2 TBS Soy Sauce
  • 1 tsp toasted sesame oil

Directions

    Stir vegetables, sprouts and water chestnuts into rice, set aside
  2. 2
    heat corn oil in lg skillet over med high heat. Cook and stir eggs 30 sec, breaking into small pieces. Stir in rice mix and cook until heated through.

    Add soy and sesame oil, blend well. Serve immediately.
