  • 1 (16 oz.) can Italian-style stewed tomatoes
  • 1/4 to 1/2 c. zucchini, sliced and chopped
  • 1/4 to 1/2 c. yellow squash, sliced and chopped
  • 1/4 to 1/2 c. mushrooms, sliced and chopped
  • 1/4 to 1/2 c. green/red/yellow peppers, sliced and chopped
  • 1/4 to 1/2 c. carrots, sliced and chopped
  • salt and pepper to taste
  • oregano to taste

Directions

    In large skillet, saute stewed tomatoes and fresh vegetables until vegetables are tender-crisp.

    Add salt, pepper and oregano to taste.
