- 1 (16 oz.) can Italian-style stewed tomatoes
- 1/4 to 1/2 c. zucchini, sliced and chopped
- 1/4 to 1/2 c. yellow squash, sliced and chopped
- 1/4 to 1/2 c. mushrooms, sliced and chopped
- 1/4 to 1/2 c. green/red/yellow peppers, sliced and chopped
- 1/4 to 1/2 c. carrots, sliced and chopped
- salt and pepper to taste
- oregano to taste
Directions

1In large skillet, saute stewed tomatoes and fresh vegetables until vegetables are tender-crisp.
