Quick Vegetable Soup

- 1 (16 oz.) pkg. frozen mixed vegetables
- 1 (1 oz.) envelope onion soup mix
- 1 (46 oz.) can V-8 juice
- 1 lb. lean ground beef
- 2 bouillon cubes or 2 Tbsp. (beef)
Directions

1Combine first 3 ingredients in a heavy pan; bring to a boil. Cook beef until crumbled and brown.

2Stir into vegetable mixture and add bouillon.

3Reduce heat and simmer at least 20 minutes or longer.

4Yields 2 quarts.
