Quickbread Holiday Fruit Cake

- 2 eggs
- 2 c. water
- 2 pkg. Pillsbury date, apricot nut or cranberry quick bread mix
- 2 c. pecan halves or chopped
- 2 c. raisins
- 1 c. candied pineapple, cut in wedges
Directions

1Heat oven to 350°.

2Grease and flour bottom and sides of 12 cup fluted tube pan or 10-inch angel food pan in large bowl. Combine eggs and water.

3Add remaining ingredients by hand.

4Stir until combined.

5Pour in prepared pan.

6Bake at 350° for 75 to 85 minutes or until toothpick inserted in center comes out clean. Cool for 30 minutes.

7Loosen edges and remove from pan.

8Cool completely.

9To store, wrap lightly in foil or plastic wrap.

10If desired, glaze with corn syrup.
