Quickie Sponge Cake(Do Not Separate Eggs)

- 8 large eggs (2 c.)
- 1 1/2 c. sugar
- 1/2 c. potato starch
- 1/2 c. cake meal
- 2 Tbsp. orange juice
- 2 Tbsp. lemon juice
- rind of orange
- rind of lemon
Directions

1Set oven at 350°.

2Put eggs in 4-quart bowl and place on top of warm part of stove for 1/2 hour.

3(Eggs must be room temperature or warmer.)

4Beat eggs on high speed for 5 minutes.

5Add sugar and beat 5 minutes more.

6Gently fold in juices, rind, potato starch and cake meal into egg mixture.

7Pour into 9-inch tube pan and bake 50 minutes.
